What’s in a cup of egg coffee?
According to the founder of the egg coffee recipe in Hanoi, this drink was invented due to a shortage of cow’s milk in Vietnam during the 1940s. Chicken eggs, however, were always available. When whipped, eggs form a smooth, creamy, and fragrant foam similar to milk. With proper preparation and the addition of a bit of condensed milk, this egg foam not only loses its raw smell but also blends harmoniously with pure coffee, creating an unforgettable flavor.
The ingredients in each cup of egg coffee include: 1-2 shots of espresso, an egg yolk, condensed milk, and a bit of honey or sugar. Here’s a detailed recipe for one cup of egg coffee:
Coffee
- 1-2 shots of espresso
- 1 tbsp condensed milk (optional)
Egg Foam
- 1 tsp condensed milk
- 1 tsp honey/sugar
- 1 egg yolk
- A pinch of cocoa powder
You can easily purchase condensed milk at the supermarket or even make condensed milk at home using whole milk in about 30 minutes. For the coffee, you can use robusta or arabica beans, depending on your preference.
How to Make Vietnamese Egg Coffee
Making egg coffee is very simple and takes less than 5 minutes. Just follow these steps:
Step 1. Making the Coffee
- Use an espresso machine, moka pot, coffee filter, or your preferred method to brew 1-2 shots of espresso based on your coffee-drinking habits. Instant coffee can also be used for egg coffee. It’s best to prepare the coffee before whipping the egg foam to avoid letting the foam sit too long before serving.
Step 2. Making the Egg Foam
- Carefully separate 1 egg yolk, ensuring no egg white remains, to prevent the foam from having a raw smell. Add condensed milk and honey/sugar, then whip the mixture for 2-3 minutes until it becomes fluffy and turns a light yellow color.
Step 3. Combining
- If you prefer a sweeter coffee, add 1 tbsp of condensed milk to the bottom of the cup, then pour the espresso over it. Gently pour the whipped egg foam on top until the cup is full.
- Finally, garnish the coffee with a sprinkle of cocoa powder on top. You can also try decorating the surface of the egg foam with a few drops of coffee or whipped cream for a creative touch.
- When serving egg coffee, if you plan to enjoy it for more than 10 minutes, place your cup in a bowl of hot water to keep it warm. This ensures that the egg foam stays warm, rich, and fragrant without developing an eggy taste.
