Puffed rice is one of my favorite childhood snacks! After being fried in oil, the rice is mixed with caramel, peanuts, white sesame, ginger…. to add flavors to the puffed rice. It can also be pressed into bars and preserved in 1 month. So, let’s make ginger caramel puffed rice at home!

What is Puffed Rice?
We’re all familiar with popcorn—the addictive, aromatic snack we love to munch on while watching movies. Popcorn is made by tossing dried corn kernels into hot oil, then mixing in butter, caramel, or chocolate. If you replace the corn kernels with rice grains, you get puffed rice! The process for making puffed rice is quite similar to that of popcorn: Heat oil, add the rice grains, wait a few seconds for the rice to pop, then mix it with sugar, caramel, and other ingredients.
Ginger Caramel Puffed Rice is a nostalgic treat for many. It can be enjoyed just like popcorn, with each puffed rice kernel coated in fragrant caramel and ginger, or pressed into bars for a different twist.
Ingredients for Ginger Caramel Puffed Rice
The ingredients for this snack are very simple: rice, ginger, and sugar. You can make puffed rice at home by frying rice grains in hot oil or buy plain, premade puffed rice from the supermarket. Here’s the recipe for a batch using 300g of puffed rice:
- 30g ginger (about 1 oz)
- 200ml water (about 6.8 fl oz)
- 300g plain puffed rice (about 10.5 oz) or 250g rice (about 8.8 oz)
- 30g sesame seeds (optional, about 1 oz)
- 120g sugar (about 4.2 oz)
- A dash of lemon juice (about 1/4 teaspoon)
This recipe gives you a deliciously crispy puffed rice snack with the warm, spicy flavor of ginger and the sweetness of caramel.
How to Make Ginger Caramel Puffed Rice
You can make this snack in just 30 minutes! Here’s how:
Step 1. Make Puffed Rice
- If you’ve purchased premade puffed rice, you can skip this step. If not, prepare puffed rice by frying uncooked rice grains in hot oil until they puff up completely.
Step 2. Prepare Ginger Caramel
- Finely crush 30g of ginger and mix it with 200ml of water.
- In a large pot, add the ginger-water mixture and sugar. Gently stir to distribute the sugar evenly. Heat the pot over low-medium heat and cook until the mixture turns golden brown. Add a dash of lemon juice to the caramel to prevent crystallization.
Step 3. Mix Puffed Rice with Ginger Caramel
- While the ginger caramel is still hot, reduce the heat to low and immediately add the puffed rice to the pot. Quickly stir to coat the puffed rice evenly with the ginger caramel.
- If desired, transfer the caramel-coated puffed rice into a tray lined with parchment paper and press it into bars. Alternatively, you can leave the puffed rice kernels separate, like popcorn, and enjoy them right away.
