Step 1. Cooking the Asparagus Ends
- Cut and wash the asparagus ends with water. Then, boil the asparagus ends until they are soft, which usually takes about 15 minutes from when the water starts boiling.
- After boiling, place the asparagus ends and their cooking water into a blender, ensuring the amount of water is double the volume of the asparagus ends. Blend until smooth. If you don’t have a blender, you can mash the asparagus ends thoroughly, then mix in the appropriate amount of cooking water.
Step 2. Cooking the Soup
- Mix the blended asparagus ends with heavy cream and minced garlic. Olive oil is optional. Then, heat the mixture over medium heat, stirring continuously until it is well combined. Turn off the heat when the mixture begins to simmer gently.
- When serving, you can add some roasted, steamed, or pan-seared asparagus for garnish, along with pepper and/or cheese.
